Whoopie Pies

So these are probably my all-time favorite cookie when I was growing up.....and I've been craving them lately. So I'm going to share this amazing yumminess with you. Try them!
It will leave you craving more ;)


Amish Whoopie Pie Recipe

1/2 cup solid vegetable shortening
1 cup firmly-packed brown sugar
1 egg
1/4 cup unsweetened cocoa
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon pure vanilla extract
1 cup milk
Whoopie Pie Filling (see recipe below)

Preheat oven to 350 degrees F. Lightly grease baking sheets.

In a large bowl, cream together shortening, sugar, and egg. In another bowl, combine cocoa, flour, baking powder, baking soda, and salt.

In a small bowl, stir the vanilla extract into the milk. Add the dry ingredients to the shortening mixture, alternating with the milk mixture; beating until smooth.

Drop batter by the 1/4 cup (to make 18 cakes) onto prepared baking sheets. With the back of a spoon spread batter into 4-inch circles, leaving approximately 2 inches between each cake.

Bake 15 minutes or until they are firm to the touch. Remove from oven and let cool completely on a wire rack.

Make Whoopie Pie Filling. When the cakes are completely cool, spread the flat side (bottom) of one chocolate cake with a generous amount of filling. Top with another cake, pressing down gently to distribute the filling evenly. Repeat with all cookies to make 9 pies. Let finished whoopie pies completely cool before wrapping.

Wrap whoopie pies individually in plastic wrap, or place them in a single layer on a platter (do not stack them, as they tend to stick).

To freeze, wrap each whoopie pie in plastic wrap. Loosely pack them in a plastic freezer container and cover. To serve, defrost the wrapped whoopie pies in the refrigerator.

Makes 9 large whoopie pies.



Whoopie Pie Filling:
For this recipe, you are basically making a homemade Marshmallow Fluff/Creme.

3 egg whites, room temperature
2 cups light corn syrup
1/2 teaspoon salt
2 cups sifted powdered (confectioner's) sugar
1 tablespoon pure vanilla extract

In large bowl of an electric mixer, add egg whites, corn syrup, and salt. Using your electric mixer on high speed, mix for approximately 5 minutes or until the mixture is thick and volume has almost doubled.

On low speed, add powdered sugar and mix until well blended. Add vanilla extract just until well blended.

Your homemade marshmallow fluff/cream is now ready to use on your Whoopie Pies or other recipes. Use immediately, or refrigerate in a covered container for up to 2 weeks.

Makes a large quantity.

Pictures- This and That

Well, Gabe's endoscopy is over.....went well.....was not fun.....but had to be done. We are awaiting biopsy results end of this week. We will then find out if he will need further testing for his "gut disease" and allergies. Above was the way home....he was so happy to finally have something to eat!!!
He was not happy about having an IV ;(

But then we told him how Uncle Jacob had just shot a squirrel with a bow and arrow while he was sitting in his deer stand and how he took it and put it in his friend's freezer to eat up later....he smiled ;) Who wouldn't?!?!?!?
This was him after the test was done and he finally woke up....he was VERY loopy and hysterically funny ;) He coughed and farted at the same time......he said some crazy funny things....oh too bad we didn't have the video camera ;)

He was pretty much back to normal when we got home....maybe extra "loopy" ;) But well enough to help me bring the garbage cans back to the house.....

And give us his onery grin ;)


And even though the day was turning cloudy and dreary and I absolutley hated it that our poor lil guy had to go thru such yucky things, I realized how good God really is when He gives us such beauty in the trees to remind us how much we have to be thankful for.
I'm so thankful for our doctors that can help us get thru this season in his life....
and then that night we turned up the praise and worship music that Daddy had turned on in the Bose Radio......and we danced.....and danced.....and danced......we literally danced the devil away.
Ellie will tell you all about it......She loves to praise Jesus! Check out that girl's hair....BOOM!
This guy is a little bit more laid back when he worships......and that's ok too ;)

And Little Miss Muffett.......well she just crawls and crawls and crawls while we dance away.....




Little Miss Big Stuff herself......I'm in denial that she's gonna walk early like her big brother did at 8 months......I'm gonna try to prevent it as much as possible ;) I want her to stop growing so fast!!!! Tonite she stood with no help for a little bit by herself....*sigh* So not ready....

Pictures-Lion King 2010

So 110 of us headed up to Chicago yesterday to see the Broadway performance of Lion King.
We were about 2 blocks long.....
Our beautiful table mates......Brittney and Gloria.....

This is what I have to put up with.....constant goof :)

But I think I'll keep him.....we had an amazing supper at Giordano's Pizza....yuuuummmm.....

I love checkin' out all the buildings in Chicago.....
Especially this one....however I'm always happy to return to the countryside that isnt as crowded, loud, busy or smelly as the city....
The performance was OUTSTANDING!!! The talent, voices, costumes, music....oh my goodness....i so want to go back again. They are performing thru November....you should totally go check it out!!! The Cadillac Palace Theater was awesome.... sadly no pictures allowed inside

Pictures-Party Shed Fun

So even though we don't "party hard".....we definatley enjoy our family and friends gatherings.....and are soooooooooooo enjoying the shed my parents built.

Trolley rides and weiner roast, baggo, sittin around the campfire....

wheelbarrow races with my piano students as well as our annual weiner roast....


wiggle cart races.....

lotsa laughter and eating......


and hayrack rides.....is what our parties consist of......

we may not party like the country teenagers around here do, but we have our own kinda parties.......where the "littles" race around in their walkers......and blow raspberries at each other


and we wiggle around in circles......
and throw our cares into the wind......as we become a "little" again......
the shed is our happy place.....where magic happens ;)

where laughter echoes and bounces off the walls......


and frowns are not allowed......

yeah......these are my kinda parties......the ones with the littles ;)
